Before I head out on the road I am always looking for new music, because I dread listening to the same old stuff. So, if you are on the road this Spring Break, or just traveling period...here are some of my favorite, "Let's Hit the Road Jack!" tunes for ya:D

It's About Time Spring!!!

It's the first day of Spring, and with that said, I've been doing some spring cleaning and found some reasons to get out in the sun and feel Springish! If this winter you've been cooped up in the house with a tad case of SAD (Seasonal Defective Disorder), with the only motivation to sleep, eat and watch tv, well here are 5 new ideas to welcome Spring!!!:)

3.) Fresh Food for a New Season!~ Spring and Summer are the best seasons for iced espressos and cold desserts!:) Here are two recipes courtesy of Giada de Laurentiis and DeenBros Good Cooking Magazine.

3/4 cup hot espresso, 1/2 cup half-and-half, 2 teaspoons of caramel topping, and a dash of Apple Pie Spice



~Combine the above ingredients and top with whipped cream, apple pie spice,and caramel topping.

Milk Chocolate Sauce: 1/2 cup whipping cream, 1/3 cup honey,and 1 (11.5-ounce) bag milk chocolate chips



Sundaes:1 (1/2-gallon) vanilla, mint chip, or coffee gelato,1 (1/2-gallon) Neapolitan ice cream, and Assorted toppings (coarsely crumbled chocolate sandwich cookies, almond biscotti, amaretti cookies, chopped toasted almonds, sliced fresh strawberries, rainbow decors, chocolate sprinkles, mini candy-coated chocolates, and maraschino cherries)



Directions: To make the milk chocolate sauce: Combine the cream and honey in a small heavy saucepan and bring to a simmer over medium heat. Remove from the heat and add the chocolate. Let stand until the chocolate melts, about 2 minutes, then whisk to combine. Cool the sauce slightly, then pour into a clear glass serving bowl or small pitcher. (The sauce can be made 1 week ahead. Cool completely, then cover and refrigerate.) Re-warm the sauce in the microwave, if necessary.



To make the whipped cream: Using an electric mixer, beat the cream and sugar in a large bowl until soft peaks form. Transfer the whipped cream to a serving bowl. (The whipped cream can be made 2 hours ahead. Cover and refrigerate.)



For the sundaes: Place each topping in a separate serving bowl. Scoop the gelato or ice cream into dessert bowls and drizzle with the milk chocolate sauce. Allow guests to sprinkle their desired toppings over their sundaes. Top with the whipped cream and cherries, if desired.

Real Simple magazine is one of my must reads and I always learn something new,whether it be how to remove lipstick stains from my favorite purse, easy and healthy recipes, or practical and innovative ways to balance life.
